Bikini

Yields 10 servings

Ingredients for the Clementine Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar

To make the Cocktail (makes 850ml, to serve 10)

400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (see above)
A few cranberries, as a garnish
Mandarin essential oil, to finish

Directions

To prepare the Citrus Syrup: Place all the items into a pot, heat until it reaches a simmer, agitating to dissolve. Then, remove from the stove allowing it to reach room temperature fully. Decant into a sterilised bottle, seal keeping it chilled, it will last for around one month.

To make Batch Mix: Combine all the liquids into a sizeable container, leave to sit for one hour, then pass it through preferably using cheesecloth, making it fully clarified.

For serving: Measure 85ml of your cocktail base into a cocktail shaker packed with ice, gently stirring carefully for a minute to chill. Pour into a cold coupe glass or similar, garnish with a few cranberries and complete it using a light spray with the mandarin essence over the drink.
